VMware Migration to Proxmox - Sync or Seed large VM

Hello all.
We are in a migration process from a VMware ESXi server to a new Promox host.

We are looking for a way to pre-seed a couple of large VMs (1.5TB and 2.2TB) and do a final sync at a coordinated cut off window.
As the process implies, sources VM would remain "on line" for the "pre-seed" (or replication) process.
The shut down would occur with the final sync and the move over to the new host.
Is it possible to do so with StarWind V2V - A massive replication of the source LIVE VMs, do a shut down and final sync of the source VM.
