We currently use VMware Workstation to run a small Ubuntu VM. I'm trying to port the VM from VMware Workstation to Hyper-V. I've tried the V2V Converter/P2V Migrator and it successfully creates an image (VHDX), but fails to boot/start properly (boot volume not found).

Should I expect this to work (or not). If it should work, any suggestions would be appreciated.

Welcome to StarWind Forum.
This is a driver-related issue. Converter did its job: it converted one file to another. Do you have anything like VMware tools installed? Try removing those. This could also be helpful: https://www.erniecosta.com/2020/02/26/h ... t-drivers/.
Try recreating it as a GEN1 VM and use the IDE controller to boot from.

Thank you for the suggestion. Importing to Hyper-V as a GEN1 VM worked.

Great news, thanks for sharing!
As a side note, sometimes VM version updates work.
