Is it possible to limit the amount of RAM memory that the StarWind Virtual SAN uses either to an absolute amount or % of physically available?

Thank you for your question.
Unfortunately, there is no such functionality in the current build, but we have it in our roadmap and we are planning to implement it in one of the upcoming builds.
