I want to upgrade my two node hyperconverged appliances from Server 2016 to Server 2019.

Is that supported? Any problems with doing so?

If I am not mistaken, Microsoft supports cluster rolling upgrade from 2016 to 2019 just like it did to the 2012R2-to-2016 transition. You can get more information on this from Microsoft. But when it comes to the StarWind part of the thing, check https://www.starwindsoftware.com/blog/c ... erver-2016 and mind all steps that are related to StarWind.

And 2019 is fully supported by StarWind?

Doing the actual upgrade shouldn't be much of an issue - the servers aren't even in production yet. I just wanted to make sure the appliances would still be supported.
