Is it possible under the free edition of starwind vsan to have a 3 node cluster, 2 hyper-v and 1 proxmox? The idea is to have the 2 hyper-v for HA stuff and the 1 proxmox is really just for lab/testing/non HA stuff. Thanks in advance!

Yes.
But, if you have a licensing error, you can reach out to support@starwind.com
Make sure to have a look at best practices at https://www.starwindsoftware.com/best-p ... practices/ and system requirements https://www.starwindsoftware.com/system-requirements
