I am seeing many more blog entries on the site mentioning Iwarp for RDMA
Does Starwind VSAN support Iwarp RDMA now ?

Thinking about a moving a 2 node setup away from a failed 2 node S2D solution and the already have some 40bit Chelsio cards in place

Currently, the only supported RDMA technology is RoCEv/v2.

The only problem with Chelsio is they use old Network Direct V1 API and Mellanox uses V2. We built our StarWind code around V2 and porting it back to V1 is such a pain... Good news: With more and more people asking for iWARP we'll add it after we'll stabilize and push out our NVMe-oF initiator for Windows. So please give us a couple of months to get the ..it out of the barn :)

P.S. Great to hear about your S2D experience, really! You're not alone, see, MAJORITY of our Hyper-V customers had tried S2D before it failed and they moved to StarWind or alternative solutions (hardware SAN is another option).
