Trying Starwinds (probably both Linux appliance and the Windows free one) in my home lab for my own virtualisation learning

How do I set up the software iSCSI client for HA, do I enter the IPs of both starwinds servers, or is there a floating/clustered IP?

I believe the best way for you would be using Windows free since it is giving more options for the configuring (for example, ESXi rescan script).
