I can foresee that I might eventually run out of room on my current san config or maybe the servers I have might just get old. Are there guidelines on how to move targets that are in an HA config to a new server (or set of servers?)

If you run out of space you can just add new HDD's to your servers, that's easy if your server accepts Hotplug.
In case of moving to new HA pair you should create an HA device on the new servers, move the data there and then disconnect the old servers. The other way is to move the existing disks to new servers and recreate the HA device there.
Anyway, by the time your servers will run old we will release a config which will allow you to migrate with zero downtime :)
