AoE and SQL Server

Is an AoE attached coraid box viable for storing
SQL Server databases?

Yes of course! You may use ATA-over-Ethernet virtually everywhere where Fibre Channel or/and iSCSI is used. There are few exceptions (clusters for example) but it's definitely not your case
