What does this block size mean?
Can it be change to 4k, 8k, 16k, 32k or 64k?
Does this affect the performance of the iSCSI LUN?

ESX 5.x uses a Unifed block size of 1MB for VMFS 5.x volumes, so you cant change it. However VMFS 5.x uses a 8K sub-allocation size for I/O so as long as you underlying device uses blocks in 8K increments you are fine.
