So I did a in place P2V of my windows server whole disk. I saved it to another disk. Now I have a 300 plus GB folder that says my machine name, and another with a backup name thats about 190GB. Which is the actual image I want to use to load into a VM? Plus, when I mount the disk in nix, it shows up like my actual C: folder, and I cant access the images

It looks like there were multiple partitions there.
Use one with the machine name on it.

any suggestions on how to mount it?
when I use the mount command the drive shows up like a my normal C: drive rather than any image and the two created folders by P2V arent there

Sadly, no advice on this topic

I see people converting physical to virtual disks, not ISO, and just spinning up the VM.

No worries, just set up the VM and mount it to boot from it.
Please note that VHD requires an IDE controller.

Thats just it, when I mount the actual disk in proxmox, it shows all the normal windows files and not the vhd files

So it works?
Proxmox works with QCOW and VMDK files.
Good luck with your project.
