Hello, can anyone let me know if this is possible? Is Starwind capable of doing a P2V from Linux, or would I need to use VMware Converter and then Starwind to get it into AWS?

Welcome to StarWind Forum!
Sadly, the StarWind V2V converter does not allow for P2V of Linux-based hosts.

This process involves turning your on-premises physical Linux server into a virtual instance (EC2) running in AWS. Here's a step-by-step overview of how to do this.
