Do I Need To Disable Shares During Conversion?

I am going to be doing a P2V of a file server.
I expect it will take several hours.
Do I need to disable the shares before starting the conversion so no one is accessing or changing data during the conversion, or can I do it "live" and the tool with pickup the changes as they are made?
I assume disabling the shares is safer but it also results it much more downtime so I'd rather not do it if I don't have to.

StarWind V2V converter is making a snapshot before conversion and all the changes after the start are not included.
