I have the V2V installed on a VM that is on our ESXi instance.

I have a lot of VMs that I want to convert over to Hyper-V, with some of them being near 8TB. The VM has access to 1G and 10G connections, I would prefer to transfer 8TB of data over the 10GB connection vs. the 1GB.

I have run into an issue with Veeam, where even though you put in the IP address of the 10GB connection, it would for some reason go to the 1GB connection.

Which method would be the fastest at converting a VM containing a total of 8TB of VMDKs?

Just use the IP address of the ESXi ghost that belongs to the 10 Gbps network segment. This should be fine for you. If you run into any issues, let us know.
