So small update here

Veam Recovery will work to a certain extent but there are some considerations to take in- unlike starwind I don't believe you can essentially clone your VM using Veeam and have both the old machine and new machine running concurrently. The final step of the Veeam recovery process causes issues with DNS on the old VM unfortunately. I am trying to find a way around this but it could be a bit of a problem for folks.

With the starwind P2V route- is that going to simply clone my physical disks or is that going to be a full scale migration to virtual? Sorry for the numerous questions, I'm just really trying to avoid having systems fail during migration if I can help it.

No worries. P2V creates a virtual copy of your physical volume/machine without powering it on or altering the existing volume's contents.
