NFS share is not present in CentOS-based appliances. Please download the CVM OVF to use NFS shares.

You can use off-the-shelf hardware and publish storage over iSCSI at no cost. Since the solution is hardware-RAID-based (i.e., has no software RAID), performance should also be good. Can you move the CSV to the affected node or will it fail? Any antivirus installed (e.g., Sophos, Acronis CyberProtect, etc)?

Please make sure to remove the VMWare tools or Hyper-V integration tools from the VM. Try also to use IDE controller for boot. Play around with the boot loader too. If you connect that disk to any other VM, does it see the File system on top?

We have no procedure for iSCSI and IBM Spectrum in particular.
Were you able list the volumes using the commands I shared?
The standard way of using iSCSI is by connecting the VTL via 127.0.0.1 to a Windows server.
